POSTHARVEST QUALITY IMPROVEMENT OF NUTMEG (Myristica fragrans)

Nutmeg (Myristica fragrans) or fragrant nutmeg is an important commodity that has been used in the food and pharmaceutical industries, hence its quality should be monitored. The objectives of this study were to: 1) identify Critical Control Points (CCP) nutmeg’s postharvest handling process prepare HACCP (Hazard Analysis Point) System 2) provide a recommendation on GHP (Good Handling Practices) order to maintain relation safety issue which very for international trade. Ripe fruits collected after had reached maturity fallen from their trees. A paranet was placed under each tree prevent ripe falling ground. subsequent processes taking out seeds separating pulps maces. After that, underwent drying by using smoke- oven-dried methods until moisture content reduced 10%. Subsequently, divided into two parts, prior storing process. first part fumigated phosphine (2 g/m3) eight days second not fumigated. sampling conducted at beginning storage four months storage. parameters observed content, percentage damaged kernels, population fungal species, aflatoxin content. results showed population, B1, total contents kernels having dried with without fumigation still complied requirements related safety, although nutmegs stored months. research could also determine Point nutmegs, i.e., choosing only harvested; harvesting method preventing ground; 3) immediately maces methods; 4) shells.
